Low and slow, with a Cajun twang
Wood-smoked barbecue at the Field of Dreams in Salem, New Hampshire. Brisket, ribs and pulled pork cooked over wood the long way — eat it at the pit, or we bring it hot to your event.
In the press
“Fans say Gator Pit offers a great selection on its menu.” WMUR — Viewers' Choice 2026: Best barbecue food in New Hampshire
WMUR asked its viewers where to find the best barbecue food in New Hampshire. Five places in the state made the 2026 list, and we came in at No. 4.
We're a small operation: one wood-burning smoker, parked for good at the Field of Dreams in Salem. Southern-style barbecue with a Cajun twist: smoke, time and patience, nothing rushed.
The method
Low and slow is a schedule, not a style
True low and slow, wood smoked, with a Cajun twang. Here's what that actually costs in hours before the window opens.
-
HR 00
Fire lit
Hardwood burned down to coals before anything touches the grate.
-
HR 01
Meat on
Rubbed, racked, and left alone. The pit does the work from here.
-
HR 06
The stall
Brisket hits a wall and stops climbing. You wait it out. This is the hour where shortcuts get taken.
-
HR 10
Bark set
Wrapped and run out until it gives with no argument.
-
HR 12
Rested, then cut
Rest is not optional. Then it's cut to order at the window.
